Chocolate Kahlua Cake
This is usually the New Year's Day cake at our house. I don't have any idea how that happened but starting the year with chocolate cannot be a bad idea. I broke tradition and made the cake this week end for a friend whose birthday was today. She loves anything chocolate. In fact, I am amazed at her passion for chocolate!
Preheat oven: 350 degrees
1 chocolate cake mix
1 (3 3/4 oz.) package instant chocolate pudding mix
2 cups sour cream (I use light sour cream)
1 12 oz package chocolate chips (I have used semi sweet or milk chocolate, whatever is on hand.)
4 eggs
3/4 cup oil
1/3 cup Kahlua
Mix all ingredients. Pour into a bundt pan.
Bake for 60 to 75 minutes. Check for doneness.

This cake is very moist and truly delicious. I normally dust it with powdered sugar but this time, because of my friend's love affair with chocolate, I made a fudge frosting. It was a little thick and didn't drizzle as I had envisioned. I will know to thin it next time.
I wanted to be able to take a picture of a slice of the cake so that you could see the wonderful texture and the molten chocolate chips scattered throughout each slice...but this is all that was left at the end of the day. It doesn't do it justice!
