Snacking at Its Best- Warm and Gooey Bean Dip!



Dark and windy afternoons mean snacking and not just a bag of chips.  It means snacking at its best...a warm and gooey bean dip!  My past experience with bean dip was the can that sits next to the chips at the grocery store.  It wasn't the best of experiences so bean dip was never on my radar, until my son-in-law claimed that this bean dip was worth making.  There was an echo from my daughter, "It was amazing, Mom."  So, why not?  It was the type of afternoon made for snacking.


 Snacking at Its Best 

Warm and Gooey Bean Dip

Yield: 8 servings

Preheat Oven:  350° F.

1 can refried beans (16 oz.)

1 cup chunky salsa

1 cup shredded Monterey Jack cheese 

1 cup shredded Cheddar cheese

3/4 cup sour cream

3 oz cream cheese, softened

1 Tbsp chili powder

1/4 tsp ground cumin

Tortilla Chips for serving

In a large bowl, combine all ingredients, except the chips! 

Transfer to a baking dish.  Bake the dip at 350 degrees for 20-30 minutes, until hot nicely browned on top and bubbly.
