Marry Me Pasta

Have you ever noticed how recipes seem to appear in waves?  All it takes is searching once and the entire internet results seem to be shoved under your nose for days.  I guess that means that I really am supposed to make this dish, not just give it a glance.  

I decided to make a version that didn't include chicken.  I will include chicken next time after I have gone to the store.  I didn't' miss the addition of chicken, I thought it had great flavor just as it was.  Isn't it nice to be able to vary a recipe and still have a winner for dinner?


Marry Me Pasta

Yield:  6

1 lb spaghetti (save a cup of the pasta water)

2 Tbsp olive oil

1 small onion, chopped

4 cloves garlic, chopped

2 Tbsp Italian seasoning

2 Tbs tomato past

2 Tbsp butter

2 Tbsp flour

1/2 cup chicken broth

1 cup heavy cream

3 Tbsp sun-dried tomatoes, from jar

1 Tbsp oil from the jar of sun-dried tomatoes

1/2 cup parmesan cheese

3 Tbsp basil, shredded

salt and pepper to taste

2 Tbsp garlic powder


Put on a large pot of water for the pasta.  Bring to a boil and cook the pasta while preparing the sauce.

Heat the olive oil in a large pan and sauté the onion until it is soft.  Add the garlic and cook for about a minute.  

Add the butter, tomato paste, flour, Italian seasoning and a light sprinkle salt and pepper.  Stir and cook over medium high heat for about 2-3 minutes.

Stir in the chicken stock and cream.  Add the sun-dried tomatoes and Tablespoon of oil from the jar.

Stir in the shredded basil and Parmesan cheese.

Finally, add some of the reserved pasta water and additional seasonings to the sauce: salt, pepper, Italian seasoning and garlic powder, to taste.  Add the pasta and mix into the sauce.

Note:  The addition of some shredded or 1-inch cubes of cooked chicken would add protein and be delicious!
