Parmesan Potato Rounds

Reading old cookbooks has become a nice activity during our "stay at home time."  I had forgotten how many great recipes there are in the old cookbooks sitting on the shelves.  (I do have a habit of accumulating cookbooks.)  Reading and cooking from an old or new cookbook makes me happy.
Thankfully, I have found that there is always one group or another cooking their way through a new cookbook.  Those groups are enjoyable.  They introduce one to the new and encourage revisiting some of the older cookbooks on our shelves.  Just what is needed on Pandemic Day 1, 2 or 129!

Cooks are rarely shy about sharing their opinion about recipes and cookbooks.  Hearing from others, as their experience with a recipe is shared, usually guides me to recipes that should be reviewed and possibly tried.  The digital Cookbook Club hosted by The Kitchn is a great place to start and the best part, aside from cookbooks and cooking, are the people in the group!  The second group is the Food52 Cookbook Club.  The cookbooks do overlap on occasion which makes me happy.   Both groups interact on Facebook.  Check them out, both communities are fun and I have learned a lot about cooking along the way... They are also flexible...participation is a choice.  If I am in the mood and like the book, I am there.  If not, it is okay.  There are no Cookbook Club police!

Recently, I unearthed a great recipe from the past.  It isn't a cookie recipe but it does have carbs....I am consistent about that.  How about potatoes...delicious and comforting!  Looking for a potato recipe that I knew was somewhere was daunting.  Thank goodness I could see a blue cookbook cover in my mind.  That helps, right?  It did help, but just how many blue covers can possibly be in a collection?   Hint:  More than one!

This gem was from a trip to Florence, Oregon one summer in the 90s.  Taking home a cookbook is taking home a tasty memory.


Parmesan Potato Rounds

Yields:  6 servings
Preheat Oven:  375° F.

1/3 cup butter, melted
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
Salt and Pepper, to taste
6 medium potatoes, sliced into four rounds
Italian seasoning, to taste

Pour butter into a 15 1/2 X 10 1/2 inch baking dish.  Combine the flour, cheese, salt and pepper in a plastic bag.  Shake a few potato slices at a time in the bag to coat with the flour mixture.  Place the potatoes in a single layer over the melted butter.  Bake at 375° F. for 30 minutes.  Turn the slices and sprinkle with Italian seasoning.  Bake another 30 minutes or until the potatoes are tender.  



Delicious and the perfect side dish!
